The French Cuisine
The French enjoy their meals like no other culture in the world, the preparation,
the setting to spending sometimes two and a half hours to enjoy their meals with
family and friends. So whether your are just enjoying a romantic meal in a restaurant
in Paris, or touring the many wine regions, you will be pleased with the wonderful
French cuisine and undoubtedly want to duplicate some of the recipes at home.

There are many French cooking institutions in France. A few are for the professional
chefs to learn the French cooking methods, and chefs from all over the world attend
these institutions. For the curious and those who desire to learn a few simple dishes,
like preparing a roux, a bouillabaisse, or demi-glace, their many schools set up just
for tourist visiting France.

Some travel agencies will have French cooking modules in their tour schedules. One of
the most popular is the Château du Fe situated in the Burgundy province, to the south
of Paris, this is the home of Anne Willan, a writer and a chef. This French cooking
institution has everything conceivable packed into the ideal vacation from savoring
wines, vineyard sightseeing trips, and shopping for fresh foods.

French cooking is considered an art form like painting or high fashion. There are many
courses served, each with its own smell and texture. The French take a lot of time to
savor the flavors and smells associated with their meals while discussing a variety of
topics

A typical French meal will have many different courses at one meal. French meals will
typically begin with an appetizer and wine or champagne. The appetizer can be something
as simple as raw cut vegetables with a sauce to dip in. Cheese and or spreads to top
bread are common

The appetizer and wine is then followed by the entrée, this plate is usually a full salad
served with vinaigrette dressing to keep light, next the bread or baguette and cheese is
served. There are a variety of cheeses that can be served from the mild like brie to the
stronger tasting cheese such as Roquefort. The bread and cheese are foods that can be
enjoyed throughout the meal.

Some variety of meat will make up the main course, such as lamb, rabbit or duck. Meats are
usually served with potatoes and gravy. Other side dishes such as escargot served in a garlic
rich butter sauce and green beans complete the main course.
Following the main course comes dessert, there are endless varieties of wonderful desserts
in French cuisine from tarts and mousse to crème broulets. The dessert is followed by a cup
of coffee and a truffle or chocolate noir. Then a red or white wine completes this meal to
die for.

The French have for centuries had a reputation for artful cooking and as important enjoyment
of fine dining with friends and family. With so many varieties of dishes to satisfy different
taste, accompanied by some of the finest wines on earth it is easy to see why they are rated
at the top in gourmet dining.
